2007 House of Sticks Shiraz (SOLD OUT)
Getting a bit more serious now……………..
The Sticks range is our mid range, they are wines that stylistically don’t quite make the Bricks range. They tend to be more elegant while the Bricks is more power packed.
The wine predominately comes from an early ripening site in Mudgee (81%). Upon receiving the fruit 20% of the juice was drained off and thrown away so that the remaining juice got the advantage of the higher skin to juice ratio.
The grapes were then chilled for 5 days to gently extract colour and soft tannin, then rapidly warmed, fermented hot and plunged hard by Lyndon and myself.
It was pressed into newer American oak and aged for 12 months prior to having 19% Orange Shiraz blended into it.
It is a darker coloured wine with a nose of coffee and chocolate. There is no need to wait to drink it, enjoy it over the next few years and beyond if you so choose.
