2008 Sweetbreads (Formerly known as 'Mothers Milk')
New name, same wine! This light, fresh and silky sweet wine was modelled on Hunter dessert wine styles from the 60’s and 70’s which fell out of favour when botrytis wines started being produced in the 80’s.
This wine is made by adding Mistella (fortified grape juice, like the Little Pig Verdelho) to a wine which would otherwise normally be fermented dry. This gives the sweetness to the wine. The style delivers a wine which is sweet, but not sticky. This wine pairs up very well with fresh fruit, citrus tarts and as something different hot spicy curries.
It should age well over a decade developing honey/toasty characters and building complexity.
