2011 Boartrytis
Dessert wine lovers will be familiar with the Piggs Peake I Swine and the Hungry Pig. This is yet another dessert style that we have tried our hand at. Basically, we just go into vintage year to year and see what Mother Nature does then we respond appropriately.
The base of the wine is botrytis Semillon which we have then freshened up with some botrytis Riesling and Gewurztraminer.
The wine is characteristically high in acid (I hate dessert wines that cloy) with some nice marmalade characters riding over the top. Vanillan Frenck oak rounds the palate a little on the finish.
Try this one with soft cheeses.
