2011 Crackling Merlot
Piggs Peake’s first sparkling wine is a 2008 Sparkling Merlot off the Tintilla Vineyards next door. 2008 was a year that gave us colour and flavour at lower than usual alcohol levels, perfect for the production of Sparkling wines.
The base wine spent a year in old puncheons, then 16 months on lees in bottle prior to disgorgement. It was dosaged with the 2010 Dessert Shiraz. For an Australian Sparkling Red, it is a surprisingly dry style. More of a food wine than a drink as most of them are.
Try it at Christmas with Roast Turkey and Cranberry Sauce.
